The balls make it possible to be moving while sitting. Imagine sitting at a desk in front of the computer, bouncing slightly throughout the day. Then once in a while you can let your spine move into extension by lying backwards over the ball. The ball is also a great way to add proprioceptive challenges to mat exercises like the bridge, and assistance to an exercise like the teaser.
